Effect of moisture in the purity of organic compound.
1) Weight difference using analytical weights after storage them on the dry compounds (i.e. P2O5, etc)
2) Absorbed water can work as medium for organic compounds hydrolysis

The moisture content also affects in the characterization of organic compound in spectral analysis such as NMR, IR etc. and purity of compound by affecting the melting point.
Suitable quantitative method (fast and selective) for water determination in organic compounds and mixtures is KF-titration.
Have you considered the Karl Fischer titration method?
