Hi, I am working with polysaccharides from plant samples. One of the purification steps is to add ethanol to the water extract to precipitate polysaccharides. However, in some cases, the precipitated polysaccharides could not be dissolved with water and they usually have some gel properties. It just doesn't make sense why those polysaccharides could not be redissolved with water again. Any polysaccharide expert out there, please enlighten me.
