I need to compare between oils with respect to their polarity. I need help in identifying an instrument that can do a quick measurement. Can a conductimeter be used with oils or is their a separate instrument that measures dielectric constant? Please suggest an instrument that I may be able to use to get data on oil properties.

You can do the Solvent solubility studies on HPLC if the compound is polar it will be giving high dissolution in that polar solvent. so you can try from n-hexane to water....
