Hi,

I am using the o-phthalaldehyde assay (OPA) to quantify the % degree of hydrolysis in bacterial fermented milk supernatants.

However, for some of my isolates I am obtaining negative %DH values. Can anyone provide some insight or reasoning as to why this may occur? My fermented milk samples are being compared to an uninoculated milk sample.
