i am trying to use Eulerian- Eulerian model to simulate oil- water separation. i considered The first phase (water) as the continuous phase and the second one(oil) as dispersed phase"
my question is how you specified the second phase in E-E model, because when i tried to specify it i found just two options the first one is granular and the second one is interfacial area concentration. however, when i leave them unchecked, i still have diameter option which is by default 10^-5
can you help me in choosing second phase right option, please

I have never tried modeling of Multi-phase problems with FLUENT. But this is what i feel abouy your question. Eulerian-Eulerian model has separate set of conservation equations for both phases. However, it is based on volume fraction of dispersed and continuous phases. Volume fraction is based on a simple algebraic expression like alpha1 + alpha 2 = 1 (which means alpha is the void fraction of each phases).
So in short, you have to specify only one phase to work. for eg: If water is continuous phase then if it's volume fraction is 0.3, then automatically you are initializing the second phase as the rest ( i assume it works like this).

Good day Saja. Just to see if you could go forward with the oil in water FLUENT analysis. I am trying to model a free water knock out separator with similar phases. Have you seen a video tutorial for setting up such analysis in FLUENT? Thanks in advance.
The interfacial area transport model in FLUENT is for bubbly flow so it has not been validated for water-oil. So the particle size option may be better. However you have to have some idea of the average size of the dispersed phase. A Weber number estimate using the relative velocity may be a place to start.
