Hi, I wanted to know what happens to water molecules and their shells/ orbitals when subjected to boiling and how is this different from when in microwaves? I understand that supplying heat to the molecules agitates them and this causes electrons to excite and jump to higher energy levels. But How does this differ from different sources. And what happens during convection microwaves?

Any help is appreciated. If there are research papers I can read through, please mention.
