You may work on solar power plant design. Most of the work related to power plant design is related to mechanical engineering except circuit design of solar panel. So, if you learn it, you can easily work on it. In near future, there will be a potential job scope in this field.

You should look for a pertinent topic linked to available Renewable ressources in your area or country. What can you do to solve your local energy and environmental problems. Then depending on your profile and motivation, you can go either to solar PV , solar thermal (CSP?), wind, geothermal, biomass,...Agree with AbuKowsar to work on a solar power plant...but as an environmental engineer it may be interesting to work on the environmental impacts, Life cycle cost or 4E analysis of any renewable energy plant?
