Can we do vacuum packaging for mushrooms? how do we determine a product is suitable for vacuum packaging or not?
In vacuum packaging normally we do the process of Canning but in addition to Vacuum a combination of preservative would make it best for preservation. I have done the process of Canning of Mushrooms.

Yes we can do vaccum packaging for mushrooms. There are referred methods for the same including a US Patent registered for the methodology that can be employed. Products where increased chances of deterioration as a result of oxy environs can occur, vaccum packaging can be one good alternate.

Mushrooms can contain spores of Clostridium botulinum bacteria. Since the product is fresh, both the mushroom tissue and any native microflora would continue to respire; and it is expected that sealed packages would become anaerobic within a few days of packaging. In the absence of oxygen, C. botulinum can grow and produce toxin before visible signs of spoilage appear. Botulism is a neuroparalytic disease with an incubation period of 12 to 36 hours.
Vacuum packaging can be used if storage temperature can be maintained at 4C or less from the time of packaging and provided the packaging is done in a sterile manner.
Vacum Package in Mushroom can be applied with the concept of hurdle technology. You should create several hurdles in the way of spores propagation. Than you will be able to use vacum packaging.
