During polysaccharide gel preparations, rheological measurements have shown gel strength increases with concentration. However, in many papers it was mentioned that an increase in gel strength might be due to hydrophobic interaction. Can any one suggest any alternative simple method to find out the number of hydrophobic interactions in polysaccharide (pectin) gels?
