We know proteins degrade induced by many treatments or using various of regents. But can we degrade some specific proteins into fragments using very regular and simple organic acids? Is there any one who read some useful publications about this or exactly do this kind of work? I am very interested in the mechanism, for example, which amino acid is easily attacked by functional groups from the organic acids.
