The concentration of the species in an electrochemical cell changes and so does the pH. Is there a way to dynamically track the changes of pH without disturbing the solution or drawing out considerable amounts of fluid from it?
yes. Put in a platinum electrode with a trapped hydrogen bubble. This electrode would be a RHE. The potential value will vary with the pH.
The electrode might not be stable in all cases though. What is your solution?

Mine is an aqueous salt solution. The salt dissolved are standard alkalihalides.
I would suggest to use the buffered solution. If you want to look at the effect of pH, use buffered solutions with different pH
