I'm doing FE simulation for Press-braking operation in 3D. I want to study the stresses through the thickness of the plate. I use shell element.
However, the case of applying surface or general contact is still not clear to me. So, could anyone tell me which one is suitable for my simulation? and how to apply it?

Yes, you can use the contact element for your problem and use the software ABOQUS or ANSYS .
general contact is a kind of automatic way to declare contact between surfaces which may enter in contacts. Nevertheless, this method needs a longer computation time
surfaceto surface is better method when you are sure that just these surfaces will enter in contact

but how about stabilization of the element? Do I have to apply contact stabilization? because in the operation the Punch will bend the Plate
Yes, you can use the interaction modus in Abaqus to define the interaction properties between two contacted surfaces, and I am pretty sure it works!

Yes, though as usual you will have to model the problem well. Contact between two deformable bodies as done for example in Abaqus ends up calculating the forces between the two meshes in contact at the node levels so that they are in static or dynamic equilibrium -depending on the analysis type selected; therefore, in the end, you may think of these forces as loads on the individual parts, and the resulting strain & stress fields may be used for your purpose. On your problem, friction is very important and regrettably contact is much more difficult to resolve when friction is involved, yet doable.
Contact problems fall into two general classes: rigid-to-flexible and flexible-to-flexible. In rigid-to-flexible contact problems, one or more of the contacting surfaces are treated as rigid (i.e., it has a much higher stiffness relative to the deformable body it contacts). In general any time a soft material comes in contact with a hard material, the problem may be assumed to be rigid-to-flexible. Many metal forming problems fall into this category. The other class, flexible-to-flexible, is the more common type. In this case, both (or all) contacting bodies are deformable (i.e., have similar stiffnesses).
