An analogue voltage sine wave signal is send from a PLC to a Piezo actuator. This actuator converts the voltage to force. A load cell checks what the applied force is and sends a mA-signal accordingly to the applied force. I was wondering if it's possible to get a sort of (PID) control with the load cell as feedback?

You consider the sine wave multiplied by a transfer function C (s) = 1 as non linear system and you use non linear PID controller for this system.

As the load cell output is proportional to the force applied.
The load cell output can be amplified using an operational amplifier and then feedback directly into the PID controller. The PID controller can generate a control signal that can regulate the piezoelectric actuator movement.
Please note the steps to solve such a problem.
First find the overall transfer function of the LTI system.
Second plot the frequency response Magnitude and phase.
At this point every input frequency f1 has output frequency f1 with a gain and a phase shift.
