Several articles suggested that GAPDH might play a role in neurodegenerative diseases such as AD, and potentially interacts with beta amyloid precursor proteins. I am using proteins extracted from SH-SY5Y cells treated with beta amyloid for Western blot. Will GAPDH be a reliable loading control in this situation?

If i am correct Alzheimer's disease did not change GAPDH expression. In some treatments GAPDH do changes in its expression. Nowadays people are using multiple house keeping genes to normalize. Even NIH suggest to use multiple house keeping genes to normalize.
Dependig on what you are measuring you may use the total protein to normalize, e.g. total tau when measuring ptau or total erk when measuring pERK.
But for the type of experiment you mention GAPDH should be fine (I mean that I assume that you treat the neuroblastoma cells with beta amyloid for short time). If you are treating for long time there will be many aspects to consider and probably equal loading of mg of protein is even better than a "housekeeping" enzyme (cells cultured long time with Abeta may die and this introduces a new factor, i.e. whether you are measuring the protein expression of dying cells).
