I'm struggling with the concept of glycemic load. It is well established that the GL correlates very well with the area under the curve (AUC). Suppose I eat a meal containing 100 g of carbs, so quite a bit. But the average GI is only 20. That means that the GL is only 20, on de border of a normal GL and high GL meal. Nevertheless, I have consumed 100 g of carbs but only 20% 'counts'. What happens to the other 80 g carbs consumed?
