Is it due to Electron-Phonon scattering or Increased Entropy? Other factors/mechanisms?
I would like to find a mechanism to have a bette understanding on what happen with rising T°C and with different doping rates (p-type).
Should I have a seebeck increased, what about electrical conductivity?

Well, you have about the whole field of thermoelectrics just in a single question.
P-type materials exhibit positive Seebeck coefficient but not necessarily always increasing trends. Sometimes with the increse in temperature the Seebeck coefficient decreases. In fact sometimes, there are also p-type to n-type interchange with increasing temperature. More than electron-phonon scattering, Seebeck is related to fermi level and carrier concentrations etc of the materials.
Regarding the electrical conductivity, it is inversely related to Seebeck in normal cases i.e. once Seebeck is increased the electrical conductivity decreases. However, there have been many phenomena discovered (e.g. carrierr filtering) where the inter-relation between the Seebeck and electrical conductivity is broken.
