I am working on a project and we need to use an DC to AC inverter for the battery power supply. I am searching for devices that conver the current and also are capable of controlling the motor. I know that this kind of inverters can regulate the speed. But what about the torque? Does it need to be regulated with a variable resistor? How does it normally work?

Omar Hazem MOHAMMED gave you links to excellent IEEE articles. However, before giving any recommendations, I would like to have more information about your project. Do you have the inverter already or you need to develop it? What type of load you intend to control and what is the rated power and voltage? Why do you need the torque control?

This is not a short answer.
Assuming you are talking about induction motors, comercial indutrial inverters normally controls speed via escalar control (V/f) so the machine torque and current are regulated by the machine electrical dynamics.
For torque control you need a field oriented control inverter (FOC) or a Direct Torque Control inverter. With this kind of control you can control torque directly but its not as trivial as controlling current or voltage, the ac frequency plays an important role as well.
So check for field oriented control or direct torque control on literature for more details!
The best way, I think, is using a VFD (Variable Frequency Drive). It will control the frequency for the speed of the motor, and the current for the torque.
