Hi Rody,

most anthocyanin quantification protocols use acid to shift the anthocyanins into their flavilium ion, which is strongly coloured. E.g. 0.1N HCl in methanol. This can then be used for UV-spec for an estimation of anthocyanin concentration. Alternatively, run standards by HPLC and then separate your sample and integrate peaks.
