To start from scratch you may first read the book "Fuzzy Logic with Engineering applications" by Timothy Ross.

To start with, you may try to simulate a Fuzzy Logic based system with the Fuzzy Logic Toolbox available in MATLAB. 

Then read some good research papers on Application of Fuzzy Logic in your problem domain.
