Take know amount of meat sample and get it digested strong acid with the use of microwave (microwave acid digestion). Then analyse the extract with ICPMS or AAS for heavy metal detection as well as quantification. Remember detection of heavy metals like As, Hg requires formation of hydride by NaBH4 and HCl. The presence of organic matter will lead to the formation of foam in the hydride forming reaction chamber of AAS and will disrupt its functioning. So you must take care of it.
If you are limited to AAS, you will first have to make a choice which metals you want to detect. For cadmium you need a different lamp than for lead.
Secondly, as you want to analyse meat you will have to select a sample pretreatment method which may differ for the element you want to measure.
Therefore, it not easy to give a clear-cut answer to your question. Please tell me which elements you are most interested in, and I could possibly give you a more specific reply.
