It depends on the type of pollutants you are interested in. Toxins check for papers on fish LD50, for endocrine disruptors check vitellogenin induction and sex ratios etc, for heavy metals check metallothionein induction, pathogens check inflammatory markers such as the interleukins, COX and iNOS.
Best if you can specify the pollutants that you are interested in as there are hundreds of reviews on the topic.
I can highly recommend this book listed below. It has a good amount of the type of information you are seeking. There are likely very few, if any, review papers that would cover basic methods for evaluating toxic responses in fish. As Edmund suggested, there are some papers that deal with specific topics, but it appears that you would benefit from a book such as this one.

The most easy approach to know about different chemicals and their effects on living organisms, you have to test Brine shrimp Artemia species , then continue your toxicity experiment onward on target animals.
There was an envirnmental study plant of ICI in Devon studyng metal effects in fish, I remember they revealed the effects of Lead in very low concentrations.
