Can we use taq polymerase for the same or some high fidelity polymerase required?

DNA fragment of 1.3kb is not very long size, you can use Taq Polymerase enzyme itself. I guess you are performing PCR-RFLP, so no issue.
regarding Protocol,
Now-a-days, PCR buffer is coming as Restriction digestion compact-able form. so you can directly add 1-2ul of enzyme to the PCR product provided you get single amplicon (PCR Band).

1.3 kb is a small fragment. I'd use a normal taq since you're going to need to sequence to verify your product anyway.

remember that OneTaq adds an adenine to the 3' of your product, and proof reading polymerases do not do this
