I annotated (by MS/MS) a Hydroxy Fatty Acid Ester of Hydroxy Fatty Acid. So there are Fatty Acid Esters of Hydroxy Fatty Acid (FAHFA) and I can find a lot of papers for that topic. But I have two Hydroxy Fatty Acids which build an Ester. Can someone tell me about good literature on Hydroxy Fatty Acid Ester Dimers?

Any chance your FAHFA oxidised during the extraction, isolation or purification protocols?
FA easily oxidise during experimental procedures particularly if they are mono or polyunsaturated. If that´s the case then one of the acyl chains of your FAHFA could by oxidised and hence the "perception" that you have 2 HFA esters. Did you reach this concluion based on mass spectrometry experiments? If so, by MS/MS you can check if you have one di-hydroxy FA or 2 monhydroxy FA linked.

the hydroxy fatty acid ester correlates directly with a mycotoxin. So I think it is something a fusarium species is producing. I can't find other hydroxy fatty acid products that correlates with the mycotoxin. Or maybe the fusarium has an effect on an antioxidation metabolite so there is an higher oxidation in samples with higher mykotoxin concentration.
My MS/MS conclusion is that there are two mono hydroxy fatty acids linked.
