I want to log user activity in a way to determine how they access their files on daily basis. For example, student have book in pdf and he read this file and other files during learning process. Log data will be used to model of users. Any ideas or suggestions are welcome, it would be best if there is some built in feature or tools inside Operating system so user stay unaware of tracking their behavior.

Check "Define These Policy Settings," check "Success," and then click "OK" to monitor file access. Press "Windows-E" to open File Explorer, navigate to the appropriate folder, right-click the target file and select "Properties" from the context menu, and then click "Security."
Double-click "Audit Object Access" in the details window. This opens the audit properties for users who connect to your shared folder. Check the boxes labeled "Success" and "Failed." Selecting "Success" creates a log file each time the user connects successfully
This is appropriate if I know what files user will use and then set this auditing options. I tried this to set policy for c:/Users/student but what if user bring file using USB memory stick? I am thinking about setting auditing on "recent file" ... is this possible to do, any one with similar experience?
