Say if you have to simulate a fluidized bed from 0-30sec, then suppose you are taking the time-averaged quantities from 20-30s (by ticking the "Data sampling for time statistics" in the calculation activities for the time moments for which you need the averaging to be done). After the simulation is over, open the flowfield of the 30thsec in Fluent and export the "Mean volume Fraction (Phase2)" to CFD Post [i.e., if Phase 2 is solid phase, then this gives the mean solid volume fraction] by selecting the 'Unsteady Statistics' option.
Once in CFD Post, select a plane of your choice (by using the Insert option-as far as I can remember) and display the mean solids volume fraction over it. Then insert a vertical line of your choice by specifying the position on this plane. Then in the charts option, select this line and give the vertical distance (along the line) as Y coordinate and the mean solids volume fraction as the X coordinate. Now you will get the plot. Then, within the charts menu, at the bottom there should be an export option with which you can export the data as a CSV file.
