You have to pass the option --plain-output-prefix to netconvert.

It would look something like this:

netconvert --osm my_osm_net.xml --plain-output-prefix osm_net

Then you would get all plain files prefixed by osm_net

Open NETEDIT and load your network (*.net.xml). Then from go to File -> Save plain xml . This way you can easily create the nod.xml and edge.xml files.
