I am also a little confused as to what happens if you were to take mid-log cells (for examples' sake say OD600 ~0.3-0.8) and dilute to below 0.3. Do they slow their growth rate in a quorum sensing-like manor seen in bacteria? Or will they maintain their exponentially growing state, only slowing if you were to let them reach an OD above 0.8 as they start running out of resources and approach stationary phase

I don't think they would slow down reproduction if they were diluted to a lower OD, but I have not personally performed nor read any experiments about this. If you have a microplate reader this would be an easy experiment to perform.
Generally speaking the there is a lag phase in growth once dormant yeast is introduced into a new environment, such as a newly inoculated liquid media like YPD. The log phase growth then continues until there is a sensing of deprived nutrients. In a typical industrial bio-reactor or fermenter for continuous growth, the carbon source (sugar) is fed to the culture as a drip to provide a constant rate of nutrients and a constant rate of growth.
