I am making a solar flat plate collector. I need to join copper tubes to copper absorber plate. Welding is an option, but can we use any thermal paste or adhesives instead of welding? For thermal adhesive, will the bonding be strong enough to withstand high temperature?
Brazing must be used. Thermal paste is used only to reduce contact resistance between surfaces where brazing or welding cannot be used. Further, the thermal paste doesn't provide any strength to the joint.

if you could guide me to where i can find data of an etchant that matches both material would also be great
