I want induce in images different kind of blur like:
-Movement during the image capture process, by the camera or, when long exposure times are used, by the subject (Linear Blur)
-Out-of-focus optics, use of a wide angle lens, atmospheric turbulence, or a short exposure time. (Out focus blur).
-Scattered light distortion in confocal microscopy (Scattered Blur).
I have implemented convolve by gaussian in blur for sigma higher but I don't know how simulate Out-of-focus Blur. Would be nice if you coment some tips or sugestion. Greetings

You directly have a filter in matlab to introduce a motion effect,
you can simply use this kind of code :
I = imread('cameraman.tif');
H = fspecial('motion',20,45);
MotionBlur = imfilter(I,H,'replicate');
figure,subplot(1,2,1)
imshow(I)
subplot(1,2,2)
imshow(MotionBlur);
As for the out of focus, I think that the gaussian filter is already workin well :

H = fspecial('gaussian', 30, 5)
outoffocus = imfilter(I,H,'replicate');
figure,subplot(1,2,1)
imshow(I)
subplot(1,2,2)
imshow(outoffocus);
If you want to mimick a scattered blur you can just add a gaussian noise to your original image.

It would be better to convolve your initial image with particular lens point spread function (PSF) that is generally not a gaussian.
You can try to measure PSF using sub-resolution light source, simulate your lens using something like ZEMAX, get an estimation of PSF from blind deconvolution and so on forth.
