I want to gauge which scientific topics in any fields were most investigated in the past five years. For this, I want to find out in which scientific topics most papers were published and which topics have the highest number of papers in each field . How can I find out this information?

The Scimago database, which is open in the internet could give you an idea which science field is most productive. There are more selective databases such as Scopus and WoS, but they need institutional subscription.
First, choose your topic of interest and then search for paper analyzing the publications trends in that topic (bibliometric analysis). For example, please go through the following paper. You will have an idea about that.
