How to establish upper and lower control limits from raw data values in Excel to trend my analytical data?

I have values (data) from analysis carried out, but there is no established upper and lower control limits, to enable me trend the data. For instance, pH standard limit for potable water sample is 6.5 - 8.5 according to WHO, but I haven't seen such standard for gas turbine generator cooling water sample for silica analysis, and I want to establish the upper and lower limits based on the data I generated over time. How will I accomplish this? See data attached
