The downstream of a wadi is in many cases an alluvial fan or Bajada. That means the wadi channel might change its route in each runoff event.
As a downstream plain, the difference in elevations is very low and it is difficult to be defined by using the satellite based DEM.
Does anybody knows about such problems?

You might be interested in paper I co-authored on coastal plain stream and boundary refinements using LIDAR and high definition aerial photos in 2015. LiDAR based DEM may be what you want for this detail, but the hydrologic models in GIS may need your checking to catch occasional mistakes. It is detail work in office, checking and digitizing adjustments for fine errors not caught in hydro boundary model.
