Can anyone explain me how can I create a grid of 1x1 km in satellite imagery of SPOT6/7 by using Arcmap?

You can easily create such grids of as per your need. You need to use the 'Create Fishnet' tool of ArcMap. It is simple to use. You just need to input the desired interval size and shapefile your study region.

if you have ArcMap 10.8 then you can create easily, you can use toolbar> production cartography> and click Grid and graticules designer.
You can use ArcGIS 10.x Arctoolbox>Data Management Tools>Raster> Raster processing> Resampling
Resample (Data Management): Changes the spatial resolution of a raster dataset and sets rules for aggregating or interpolating values across the new pixel sizes.
