How to conduct a MANcOVA with one categorical and one continuous independent variable in SPPS?
The question is that all guides only talk about conducting a MANOVA with the independent variable being categorical in SPSS. But I need to do it with one categorical and one continuous independent variable
Which way is the best to do it with SPSS?

It would be helpful to know more about your specific research question / hypotheses and variables.
In general, you may include a continuous independent variable in a manova / mancova by specifying it as a covariate. If you're interested in whether that variable interacts with another IV, you'll have to create one or more product terms (k - 1 such terms, for each k-level categorical IV involved), and include those as covariates as well.
In this instance, it may be conceptually easier to go with multivariate regression or canonical correlation for your analysis. Again, though, that may depend on your research question(s) and specific variables.

my research question was; effects of age (3 levels) and physical activity level (continuous variable) on driving performance (3 different parameters and 2 different subtasks for each parameter).

I don't understand what you meant by continuous independent variables. The physical environment levels you refered to can't be continuous but categorical. You can classify the levels and run your analysis without stress.
