Ethyl acetate forms a positive azeotrope with water, with azeotropic composition 35.9% water and 64.1% ethyl acetate (my molar composition). You therefore will not be able to fully dry ethyl acetate by any evaporative process. You will need to use a different method.

It is no problem to dry your sample with a rotary evaporator (eg. Buchi Rotavapor). It is just essential that you drain the receiving flask, when the low boiling solvent is distilled (in your case ethyl acetate). now you can reduce the vacuum even more to also distill the water for example.

Distill the ethyl acetate at about 130 mbar and later the water at about 30 mbar. ensure the cooling is about 10 C or less and don't forget to drain the receiving flask before you lower the vacuum for the water.
