I got a little confused with "HH section" method (Hankins and Howe; 1946. Estimation of the composition of beef carcasses and cuts. USDA Tech. Bull. 926:l ). The original paper is not clear to describe the method. Should I measure "prime rib" or "whole rib (rib cage + prime rib)"? Please help me to find the answer out.
