How is the job/research impact of plant based biomaterials (especially plant protein)?

I am going to start research on plant based protein materials. The works mainly involves extraction of protein from plant, its characterization, modification and applications. How is the job/future research scope in this area? Is the area going to expand in future?

There are always companies/institutes looking for people with specific expertise, such as working on plant proteins. However, it also always make you more competitive in the market if you have knowledge/skills in other areas, such as in Molecular biology. You will also have more choices in selecting a job.
