Hi Amanda, you can use multilinear elastic mode to enter stress-strain curve obtained from the experiment. You have to enter that as stress-total strain curve. Here is a simple tutorial based on how to use experimental stress-strain curve in ANSYS. Hope it helps:

You can always do the stuff using GUI and then save the log file to see what is the code for APDL for a certain command.
