How to quantify stability in a community based on species interaction?
What is group of species? What is kind of community?
I think you must choose groups of species with with well-known interactions.
I was thinking in a general sense, no specific community or species.

check out Cardinale et al (2002; Nature) and Mulder et al. (2001; PNAS). You will find nice methodology there regarding this topic. Some other works of Bradley Cardinale deal with this same question with very elegant and brilliant approaches

Search the web and check with authorship of Dr. Joseph Ogutu (wildlife ecology statistician) - formerly of ILRI (Nairobi) and now on consultancy at a University in Germany. He has authored several journal publications.
In phytoplankton ecology, stability is often considered a hypothetical situation where a maximum of three species dominate the assemblage for, at least, three weeks without considerable change in total biomass. Some useful information on this topic can be found in a Special Issue (502) of the journal Hydrobiologia published by Springer in 2003.
"Community stability" has many definitions - from the size of population/community variability to the propensity to, or speed of, return to an equilibrium following a (small) perturbation (see Grimm & Wissel 1997, Oecologia for ~70 examples), many of which are mathematically related (reviewed by Ives & Carpenter 2007, Science). It would be helpful if you could clarify what sort of stability you're interested in, then a more direct answer could be given.
First we must know the participating species affected by the interaction and then, we can follow changes in the index of equitability over time, this later depends heavily on the diversity.
As Mike and many other have pointed out, there are multiple ways to measure stability, depending on the question. When considering observational data of species abundances across time, the interaction patterns between species are not usually known. The work of Tilman and others emphasises the covariance structure of population fluctuations over time, which leads to stability being measured as the variability of total community biomass/abundance/etc. Whether between-species interactions play an important role in affecting patterns in biomass variability can depend, e.g., on the patterns in environmental variation.
If the you're interested in studying the dynamical stability of model communities, you should look into the literature pointed above (e.g., Ives & Carpenter 2007), as this can be measured in various ways.
One cannot address the question of community stability using purely positivist models. Stability depends more an flexibility, or the *lack* of constraint. Hence it becomes necessary to quantify apophatic attributes, like redundancy, etc. I have a ms in review on the subject, but you might want to check out some earlier work at . Most of the studies on stability (including my own) have followed the lead of Bob May and dealt with dynamical stability. It turns out that dynamical models are poor metaphors for ecosystem behaviors and that equivalent criteria can probably be stated in terms of network measures themselves. Mishtu Banerjee is working on that equivalence.
