I have gone through many research papers where authors do have explained to theoretically calculate the surface temperature of fruits or vegetables for solar drying operation but couldn't get any credible source of information of how to experimentally determine the surface temperature during solar drying operation.

Even though I don't have much information about your experiment (maybe it is too expensive for your purpose, or it's not possible to apply this technique)... why not using a thermographic camera?

@ Joan Guilez. Sir, we will be using indirect type solar dryer, where there will be dryer box (enclosed box). When we want to take reading thru IR thermometer (Non-contact), will have to open the door of the dryer box (We need to take reading to tomatoes while drying) so it may be possible that we may not get exact (real) reading. And also I have a doubt that, Will IR thermometer sense the emissivity of dried tomato only or of hot air and tomatoes both ?
@ Sergio Nogales. Sir, thermal imaging camera is quite expensive and financially not feasible for this project due to budget constraints. And also, how to use it accordingly in the project will be question for us? since we are using enclosed box as dryer box.
You can use an infrared thermometer . It will only give you the surface temperature of the food.
considering the cost, thermo-couple would be feasible for your project.
