Hi all, I'm working on a project regarding moisture content of gummies products. I try to dry the gummies inside a drying machine at a temperature of around 33 degree C. After two days, I checked the moisture content using a moisture analyzer and the moisture content remained the same. The outer layer of the gummies were quite dry, so I believe that moisture was trapped inside the gummies and cannot be released even in a drying machine. Is there any other way I can use to dry the gummies to bring down the moisture content ?
The problem of the type of drying you are using is that the outer layer of the rubber dries first because it is in contact with the hot air (33 degC) and forms a solid layer or film that prevents the release of internal moisture. I would recommend using a lyophilization method
Freeze drying, also known as lyophilisation or cryodesiccation, is a low temperature dehydration process which involves freezing the product, lowering pressure, then removing the ice or moisture by sublimation.
