I have created both shell parts and meshed them the same (two square plates of equal dimensions) , then i have assigned the composite layers. I am unsure on how to connect the nodes/elements of the two parts together, the reason I am not creating this as one whole part is because I want to leave certain nodes/elements unattached to simulate delamination.
Any advice appreciated,

if you want to model delamination between two shell composite plies, try to use cohesive interaction. Specifically, create a surface to surface interaction and assign cohesive interaction properties. For further information you can check Surface-Based Behavior from Abaqus Analysis User's Guide.
There are several constraints models in ABAQUS. You could try using suitable constraints available in abaqus.
There are many interface elements available in ABAQUS software mainly to consider the surface to surface contact b/w two elements. Since you have used both composite layers by using same shell element so it easy to simulate interface between two elements. So, i suggest you to read ABAQUS manual for further details in it.
