Did you try finding the expression of HLA molecules, and markers like cd68?

There are various biomarkers for inflammation in the GI tract. Calprotectins may be used as a biomarker for evaluating in GI inflammatory disorders.

I'll suggest histopathology most along with other markers. In serum biochemical test result of higher IgE, globulin, TCE indicates the whole body changes. Here histopathology provides confirming results, just like as we prefer in our laboratory.

Which staining of histopathology could be useful?

H&E is routinely used.. this may help in this regard

Serum C-reactive protein is a good marker for inflammatory disease in general. Can also be elevated in neoplasia.

Inflammation in the bowel is usually lymphoplasmacytic or neutrophils unless it is Crohns where one finds granulomas (histiocyte or macrophage collections).  An LCA

CD45 (lymphocytes and neutrophils/eosinophils)  Immunoperoxidase and Bcl2 , cd138,cd38 (plasma cells) IPOX  on a paraffin section if there was any problem recognising these cells.
