I find problems in open a 3d image file by Matlab to find a solution for the restoration of the broken the ceramic fragments data that scanned in 3-D scanner. What is the most suitable method for open and read 3d image file by Matlab.

It depends on the specific format of your data.
Do you have some kind of binary format and you need an implementation to open and read this in Matlab? If this the case you need the format specification to implement some binary reader for the data. If it is a common binary format you might be lucky and find something ready.
If you input data is kind of an intensity image, where different intensity values represent different height values, you can treat it as a normal image object from Matlab. Use mesh function for visualization and standard matrix Matlab notation to access the data.

Either you find an existing implementation for Matlab that someone else wrote ...
Or you have to write your own reader to access the data. You will need the technical specification of the .xov format. Something like: "First 100 Bytes are used for flags and encoding information as follows ... the next 2000 Byte contain meta data as follows ... starting from Byte 2101 until end of file the data is included."
With a very quick try I could not find any .xov secification.

Thats what you need for the .xov format. Given this specification it should be easy to write a small function in Matlab to access the files on byte level.

I am sorry, but I cant help with this one. This is just another binary format and there is no reasonable way to interpret this data without a format specification ...
The company providing this format says themself; it is a proprietary format and they do not disclose any format specification on their website.At least I am not able to find anything ...

You could ask the company if they would disclose the technical specification for this format, but I hardly doubt they will do. With a lot of time and passion you might be able to reverse-engineer the format by using one of their tools and inspect it in detail. But this will be complicated and might take a very long time. Furthermore, it most likely is considered illegal.

Many Thanks for your attachment files. But as you know, it can show a .stl file not a .xov format. I will try to find a suitable way to exchange a .xov file into a .stl file.

If it is in XYZ format, you can simply read it as a text file, filling a matrix with x and y and z columns, and if it is in PLY format, try to use PLY_read from mathworks hub.
