Graduate Employability –Probability that a university graduate will acquire employment due to acquisition of a set of achievement skills, knowledge and individual attributes valuable to themselves, the community and the workplace.
In my humble opinion, preparing students for employment after graduation ought to start with teaching them study programs that are relevant to the market's demand either in the same country or in nearby countries.
These programs are expected to contain "applied" courses. The students will be served well if they are encouraged to participate in training even if they are trained on an instrument that has not been included within their curricula. For example, I often tell students in their 4th year in chemistry to acquire a practicing experience in using HPLC or GC or spectrometers...etc.
You might want to check out a recent book by Tomlinson and Holmes (can be easily downloaded online via the publisher), which focuses entirely on the topic of graduate employability. Also, in terms of measurement, one often used scale for graduate employability is the ony by Rothwell and Arnold. Full references below:

Nizar Matar. You are right. I have noticed that students who take courses that do not have clear career pathways have a difficult transition from school to the labour market. We also ought to start offering proper career guidance to the undecided freshmen on what to major on depending on the labour market requirements. This information can only be discovered through frequent labour market analysis to ascertain needs.
