I will do heat treatment on lactoferrin in milk and would like to see the change in iron binding capacity. I would love to get a way of doing this using a spectrophotometer.
Does it bind Fe (II) or Fe (III) ? Are you suggesting that there is new, unsatisfied Fe binding capacity? If so, there may be a competitive assay where xs of a coloured Fe complex is added and the loss of Fe to the milk protein registers as a decrease in absorbance.
