You will need a yield sensor, a moisture sensor, and also a gps tracking device to link the values of the sensors to a location. Also take into account the delay between the sensor reading and position of your machine. There are many products available worldwide, try the Trimble company for example.
I believe that first you must apply a statistical model to collect representative data. BTW you can, as example, elect at least eight representative parcels where you will collect the data. After that, the best and worst value are dispensed and, consequently, you will work only with MODA data, which is the area where you will obtain the better true values you want to find.
