In a nutshell: both with Adobe Photoshop and Python (e.g. with matplotlib) you should look for a dpi settings while exporting the image. That is, if you have the original data and you are producing the image (not reprocessing it).

Vid is right. But also you may use "dim" command to change the dimension of the graph. Also save it in tiff or bitmap from MATLAB PF.

However i am agreeing with VID that " scatterinterpolent2" command will give you the exterplloted data from which your graph will look good.

Use the "dpi" option in matplotlib.pyplot.savefig().

Example:

matplotlib.pyplot.savefig("image_name.png",format="png",dpi=1200)

By the way, I personally think technical questions like this should go to places like StackOverflow instead of RG, since it's not directly connected to academia.
