Due to impact load there is a deformation in specimen and I need to calculate the energy absorbed by the specimen (aluminum foam). I have mass and velocity of the striker, deformed volume of the specimen. Which formula I can use to calculate energy absorbed by the specimen?

In order to calculate energy absorption by the crushed object during impact, you have know the force-displacement curve throughout the process. The area under the force-displacement curve will give you the energy absorption during the crash event. The force data you will get from load-cells. Since you have velocity data recorded throughout the process, just integrate the velocity data to get displacement assuming you know the initial velocity of the impactor.
The energy which is absorbed by the specimen can be calculated on the basis of the velocity difference of the impactor prior to and after the impact.
