In applied mathematics, we generally study functions. If we want to express/represent all values from 0 to 1 including 0 and 1, it is simple to express like [0,1].
However, if we want to exclude 0 and 1, how to express ? All values exist between 0 to 1 but 0 and 1 is not in this range.. Can we use ]0,1[ ?

Yes you can.
What you are asking is for an open interval i.e. interval that does not include end points and is normally denoted as (a,b) or ]a,b[
